Quinoa salad

Quinoa salad 👌🏻 Ingredients:


1 Cup of Quinoa
2 Cup of Water
½ Cup of chopped parsley
2 Tbsp of chopped Mint
1 Cup of Walnuts
1 Cup of Baby Spinach
1 Cherry Tomato
4 Asparagus 
½ Cup of Sweet Corn
1/2 Cup of sautéed Mushrooms 
1 Cucumber
1 Red Onions
Pinch of Salt
Pinch of Pepper
4 TBSP Olive Oil
2 TBSP lemon juice

Steps:

1- Bring the water to a boil in a large saucepan. Add the quinoa, stir once, and return to a boil. Cook uncovered, over medium heat for 12 minutes. Strain and rinse well with cold water, shaking the sieve well to remove all moisture.

2- When dry, transfer the quinoa to a large bowl. Add the rest of the ingredients and toss well.
